Roasted Sweet Potato and Black Bean Quesadillas

2 Large Sweet Potatoes, peeled and sliced into chunks
4 White Tortilla Wraps
1 tsp Smoked Paprika
1 tsp Cumin
1/2 tsp Ground Coriander
1/4 tsp Cayenne Pepper (or to preference)
1/2 can of Black Beans, rinsed
2 Large handfuls of Cheddar
Juice from 1/2 a Lime
Salt & Black Pepper, to taste
Olive Oil (see note A)

Extras 'n' optionals:
Fresh Coriander
Extra Limes
Sour Cream

Preheat stove to 220c (430f). 

Location your spuds in a suitably sized stove meal and provide a great drizzle from Oil. Include your Smoked Paprika, Cumin, Ground Coriander, Cayenne Pepper, Salt & Pepper and provide a blend to totally layer them. Stand out in the stove for a great 30-40mins or up until softened with a caramelized trip. 

When the meal has cooled off a bit, get a potato masher and approximately shatter your Wonderful Potatoes. Location away. 

Take a Tortilla and lightly comb one side from this with Oil. Put on a griddle frying pan (see keep in mind B) fueled oil side skin down, ensuring the hob is shut off. Spread out on fifty percent from your Wonderful Potato mash, leading with fifty percent your Black Beans, 1 Handful from Cheese, a press from Lime Juice and Seasoning if required. Location a 2nd Tortilla on leading, push down to include the filling up and lightly comb the leading with Oil.

At this point turn the hob onto a medium heat and fry for around 6-8 mins on each side, or until griddle marks appear with a golden surrounding. If you tap on the Quesadillas it should sound slightly hollow and crunchy.
