Easy Taco Salad Recipe

Easy Healthy Taco Salad Recipe, ready in 20 minutes! Make this with ground beef or turkey, or only beans for a vegetarian taco salad. Serve for dinner or meal prep to make lunch bowls!



Ingredients
1 pound lean ground beef (or ground turkey or chicken)
salt & pepper
2 tablespoons homemade taco seasoning
½ cup water
8 cups chopped romaine lettuce
15 ounce can black beans, rinsed and drained
15 ounce can corn, drained
1 cup cherry tomatoes, halved
1 cup grated cheddar and/or jack cheese
1 large avocado, sliced
1 cup salsa
Plain Greek yogurt or sour cream for serving, if desired

Directions
Heat a large skillet over medium heat. Add ground beef and sprinkle with salt and pepper. Cook, breaking up the meat, until meat is browned, about 5 minutes. Add the taco seasoning and water, reduce the heat to a low simmer, and cook, stirring occasionally, until liquid is mostly gone and meat is cooked through, about 5 minutes.
