Peanut Asian Chicken Lettuce - Low Carb

Peanut Asian Chicken Lettuce Wraps are a healthy gluten-free and low-carb lunch or dinner recipe that does not require any cooking to whip up!

  • Ingredients
  • 1 fully cooked rotisserie chicken shredded
  • 1/3 c soy sauce* gluten free
  • 3 Tbsp peanut butter smooth
  • 3 Tbsp honey
  • 1 Tbsp rice wine vinegar
  • 2 Tbsp olive oil
  • 1 tsp sriracha
  • ¼ tsp pepper
  • ¼ tsp garlic powder
  • Lettuce for wraps
  • ½ c roasted peanuts
  • 1 bunch green onions

  • Shred pre-cooked rotisserie chicken (I like to buy mine already cooked at the grocery store and get the “natural” flavor so there is no hidden gluten and no extra flavors.) Hint: chicken shreds easiest when it is still warm.
