Vegan Cookie Dough Protein Bites

Soft, chewy, no bake vegan cookie dough protein bites! An easy breakfast, snack, or dessert, these cookie dough bites are full of healthy ingredients and plant-based Sunwarrior protein! Happy Monday, friends! If you’re not a Monday person (and who is, really?!), I’ve got just the cure..



Ingredients

1 1/2 c whole grain oats, ground into flour
1/2 c vanilla Sunwarrior protein
1 c date paste - I use about 16 medjool dates blended with 1 c hot water, then measure out 1 c paste
1/4 c almond milk
Optional:
1 tsp almond extract
Unsweetened, dairy-free chocolate chunks

Instructions
In a large bowl combine the oat flour and protein and stir to combine.
Add the date paste, almond milk and almond extract and stir into a thick dough.
Roll the dough into balls (I did 2 tbsp each), and roll in chocolate chunks if desired.
Store in the refrigerator.
