Vegan Peppermint Patties

Creamy peppermint patties with the perfect combination of chocolate and peppermint. Vegan, gluten free and 6 ingredients.



INGREDIENTS
PEPPERMINT FILLING:
1/2 cup raw cashews, soaked for a minimum of 2 hours or overnight, drained and rinsed*
1/4 cup unrefined coconut oil, melted but not hot
1/4 cup rice malt syrup (make sure it’s labeled gluten free if needed)
2 tbsp canned coconut milk
2 tsp peppermint extract – or to taste
CHOCOLATE COATING:
1/4 cup unrefined coconut oil
1/4 cup rice malt syrup
1/4 cup cocoa or cacao powder

INSTRUCTIONS
FOR THE PEPPERMINT FILLING:
Line each mold of a muffin pan with cling wrap. This makes it easier to remove the patties once they’re frozen.
Add all the ingredients for the filling to a high speed blender and mix until smooth, scraping down the sides when needed.
