Baked Chickpea French Fries | Vegan, Gluten-Free

These Baked Chickpea French Fries are made with only 2 ingredients! They are vegan, gluten-free, oil-free and rich in protein. Enjoy with hummus or vegan cheese sauce!

For the fries:
1 + 1/3 cup chickpea flour (130 g)
2 cups water
1 tbsp curry powder (optional)
salt & pepper (optional)
For the vegan cheese sauce:
1/3 cup red lentils, cooked (25 g)
3 carrots (150 g)
3/4 cup canned coconut milk (200 ml)
2 tbsp nutritional yeast

Make the fries:
To a saucepan, add water, curry powder, salt and pepper if using. Stir with a whisk and bring to a boil. Add in chickpea flour and whisk constantly for 1 minute until it thickens.
Turn off the heat and blend the mixture with a blender or an immersion hand mixer until completely smooth.
Transfer the mixture to a lined 8-inch (20 cm) square baking pan. Let sit at room temperature for 30 minutes and place in the fridge for 1 hour or until set.
