Homemade Potato Gnocchi and Getting Back On Track

Homemade Gnocchi - an Italian potato dumpling that is easy to make at home and tastes great in your favorite Italian recipes! Serve it with melted butter and sage, pesto or your favorite marinara sauce

2 medium potatoes, peeled
2 cups all-purpose flour
1 egg, slightly beaten
Pinch of salt

Place the potatoes in a medium saucepan. Cover with water. Bring the water to a boil over high heat. Cook the potatoes until tender, but still firm – about 15 minutes. Drain the water and mash the potatoes with a potato masher.
