Scrumptious Blueberry Hand Pies

Simple, rustic, wonderful, vegan blueberry hand pies - these are perfect for a summer picnic!

For the crust:
1 1/2 cups white spelt flour You can also use all-purpose flour or gluten free flour
1/4 teaspoon salt
1 teaspoon organic cane sugar
1/2 cup vegan buttery spread I use Earth Balance, cut into small pieces
4-5 Tablespoons cold water
For the filling:
1 pint fresh blueberries
2 Tablespoons organic cane sugar
1 Tablespoon white spelt flour
For the top:
2 teaspoons organic cane sugar

Make the crust. Place the spelt flour, salt, and sugar in a large bowl. Add the vegan buttery spread and mix together using a pastry blender.
Once the mixture resembles coarse crumbs, add the water and stir until the dough comes together and forms a ball. Wrap dough in plastic wrap and refrigerate for 30 minutes.
