Spinach Banana Pancakes

Spinach Banana Pancakes for Baby Led Weaning. A healthy option for kids and adults to have for breakfast or a snack. Easy to make ahead and freeze.



INGREDIENTS
2 cups of old fashioned or rolled oats
1 1/4 cups of milk (nut or dairy)
2 cups of spinach
1 large ripe banana
1 egg (or 1/4 cup of apple sauce)
1/2 teaspoon cinnamon
1 teaspoon pure vanilla extract
1 1/2 teaspoons baking powder

INSTRUCTIONS
add the oats to a high speed blender or food processor and blend until broken down into a flour like consistency (does not need to be perfect)
add the almond milk, spinach, banana, cinnamon, egg and vanilla and blend until the spinach is completely broken down and the batter is smooth
