Vegan + gluten free turtle bars

Vegan + gluten free turtle bars STACKED with three layers of deliciousness. They're low in sugar, no-bake, and gooey/crunchy/creamy all at the same time. Just 7 ingredients, plus whatever toppings your heart desires

For the base:
2 cups oat flour
1/4 cup almond butter (I use salted, creamy almond butter)
3 tbsp maple syrup
3 tbsp water
For the second layer:
1/3 cup coconut butter, melted
2 tbsp cashew OR almond butter (I've made these bars with both, and both are delicious! The cashew butter will make the second layer lighter in color)
3 tbsp maple syrup
3 tbsp almond milk (or your favorite nut milk)
For the chocolate layer:
3/4 cup dairy-free dark chocolate chips, melted
3 tbsp coconut oil, melted

STEP 1 For the base layer, mix all ingredients except the water. Once everything has been mixed together (it will be crumbly), add water and mix with your hands until a dough forms
STEP 2 Press the dough into a loaf pan (I line mine with parchment paper to make it easier to get the bars out)
STEP 3 For the second layer, heat the jar of coconut butter in the microwave in 20 second increments until you can easily stir it. Don’t heat it for too long or it will burn
