Vegan Oat Fudge Bars (Starbucks Copycat)

All the rich, chocolatey goodness of your favourite Starbucks Oat Fudge Bars, made totally vegan!

Oat Layer:
½ cup white sugar
½ cup brown sugar
½ cup vegan butter, room temperature
1 flax egg (1 tbs ground flax + 3 tbs warm water)
1 cup all-purpose flour
1 ½ cup oats (quick or rolled)
½ tsp baking soda
Fudge Layer:
¼ cup vegan condensed milk (I used this kind)
½ cup vegan chocolate chips
2 tbs vegan butter
¼ tsp vanilla extract

Preheat oven to 350 F
Line an 8x8 pan with parchment paper and grease with cooking spray (make sure to leave an overhang of parchment paper for easy removal later!)
For the flax egg, combine ground flax and warm water in a small bowl and stir. Set aside to thicken
