Vegan Sweetened Condensed Coconut Milk

A homemade sweetened condensed coconut milk that's vegan and refined sugar-free. This recipe also has a sugar-free option for those following a candida diet. I use this to make vegan fudge and homemade caramel!!

1 can full fat coconut milk
1/4 cup maple syrup* or favorite liquid sweetener
pinch sea salt
Add all ingredients to a small saucepan and bring to a boil. Keep uncovered and reduce heat slightly but continue to boil. Simmer for 35 - 40 minutes, whisking occasionally to prevent burning, until liquid has reduced to about half and starts to thicken slightly.
