Melting Sweet Potatoes

These Melting Sweet Potatoes are a must Thanksgiving side dish. The edges are slightly crunchy and the insides are super tender, caramelized & candy-like!

Sweet Potatoes
3 medium whole potatoes peeled and sliced into 1/2 inch thickness
2 Tbsp butter melted
1/4 tsp salt
Dash of cinnamon
1/3 cup maple syrup
1/3 cup chopped pecans
More maple syrup for serving if desired

Sweet Potatoes
Preheat the oven to 425°F.
Place the sweet potatoes on a sheet pan, add melted butter, salt to taste and pinch of cinnamon.
Toss to coat, and then spread the sweet potatoes on the pan in a single layer, not touching.
