Vegan Date & Almond Cookies

These cookies pack a ton of nutrition into one little delicious bite, plus with no added sugar they make a much healthier snack and treat option to be enjoyed anytime of day.

1/2 cup dates, finely chopped
1/4 cup raw almonds, finely chopped
1/2 cup ground raw almonds
1 1/2 cup ground quick oats
3/4 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1/3 cup light canned coconut milk
3/4 tsp pure vanilla extract
2 tbsp coconut oil, melted
Mix together all the dry ingredients and set aside.
Mix together all the wet ingredients in a separate bowl.
Add to the dry ingredients and mix.
Refrigerate the dough for 20 minutes.
Pre-heat the oven to 325 degrees.
