Watermelon Arugula Salad

Watermelon Arugula Salad - an explosion of sweet, salty, nutty, and peppery flavor in every bite!

3 tablespoons olive oil
Finely grated zest of 1 medium lemon
Juice of 1 medium lemon
Kosher salt
Freshly ground black pepper
5 ounces arugula (about 5 packed cups)
2 cups (1-inch) watermelon cubes
4 ounces feta cheese, crumbled (about 1 cup)

Whisk the olive oil, lemon zest, lemon juice, a pinch of salt, and a few grinds of black pepper together in a large bowl. Add the arugula and watermelon and toss to combine. Add the feta and mint and toss again lightly.
